Sumptuous pear tart
Ingredients
For the dough:
2 1 / 2 cups flour
1 / 2 cup flour stone ground corn
3 tablespoons sugar
1 teaspoon kosher salt
8 oz unsalted butter, diced
3 tablespoons juice concentrate Apple
2 tablespoons cold water
For the filling:
2 Anjou pears, peeled, seeded and thinly sliced
3 tablespoons balsamic vinegar
4 tablespoons sugar
1 pinch nutmeg
Pepper 1 / 4 teaspoon cinnamon
2 tablespoons butter
1 cup blueberries
1 teaspoon flour
1 1 / 2 cups cake, diced
1 egg beaten with 1 tablespoon water
Sugar 1 / 2 teaspoon
Preparation
1) Preheat oven to 400 degrees F.
2) In a food processor, combine flour, semolina, sugar and salt. Pulse to combine.
3) Place the dry ingredients in a bowl and put the container in the refrigerator.
4) Remove half stick of butter refrigerator and allow it to come into the room
temperature.
5) In a food processor, add ½ stick of butter to the flour mixture. Pulse until the fat
disappears completely.
6) Add the remaining butter ice in separate lots. Pulse until mixture resembles flour
the size of a pea.
7) Mix juice concentrate apple and cold water.

9) After three tablespoons of liquid, make dough for consistency. It should be

19) Dust flour and mix well. Cool to room environment.
20) Put the dough on a piece of parchment covered with flour and roll 1/4-inch thick disk of.
21) Transfer to a baking sheet.
22) Place cake cubes in the center of the dough, leaving a 3 inch margin of the cortex
on all sides.
23) Spoon mixture over cake cubes and top the pears with a touch of butter cubes.
24) Raise the bark of an excess in the filling and duplication in the sense of clockwise until the upper lip one
formed in the periphery of the whole pie.
25) Brush pie with egg and sprinkle the dough with sugar.
26) Bake for 30-35 minutes, or until the filling starts to bubble and crust is golden
brown.
27) Remove foil from pan immediately and let Cool on cake rack.
